Meal Plan Monday: 2/20-2/26/17

Here's what we'll be eating this week:

Monday:
B - Dannon 000 Vanilla Yogurt mixed with a diced apple and cinnamon with Sweet & Spicy tea to drink (E)
L - large salad with (2) hard-boiled eggs, deli ham and Ranch dressing with water to drink (S)
S - Refreshing Fruity Shake (E)
D - Zuppa Toscana Soup with water to drink (S) pg. 86 in the THM Cookbook

Tuesday:
B - (2) scrambled eggs with cheddar cheese mixed in and strawberries on the side with Sweet & Spicy tea to drink (S)
L - leftover Zuppa Toscana Soup with Cider Pop to drink (S) ***There are enough leftover to feed my family of 6.
S - Cottage Berry Whip with water to drink (FP) ***I'm making a double batch and will eat the rest tomorrow.
D - Slow Cooker Italian Beef & Cabbage with a small side salad and water to drink (S)

Wednesday:
B - small container of 0% plain Greek Yogurt mixed with 2 T. peanut butter and 1 t. sweetener with water to drink (S)
L - (1) low-carb tortilla with deli ham, lettuce, cheddar cheese, mustard and mayo with fresh veggies and strawberries on the side with Cider Pop to drink (S)
S - leftover Cottage Berry Whip with water to drink (FP)
D - Barbacoa Beef on top of lettuce with salsa, sour cream, green onion and cheddar cheese on top with water to drink (S) 

Thursday:
B - Peanut Butter Milkshake (S)
L - leftover Barbacoa Beef on top of lettuce with salsa, sour cream, green onion and cheddar cheese on top with Cider Pop to drink (S)
S - Dannon 000 Vanilla yogurt mixed with a diced apple and cinnamon with water to drink (E)
D - Slow Cooker Chicken & Quinoa Chili with water to drink (E)

Friday:
B - Thin Mint Shake (S)
L - leftover Chicken & Quinoa Chili with water to drink (E)
S - cheese stick and small handful of almonds with water to drink (S)
D - Slow Cooker Pizza Casserole with fresh veggies on the side and Dr. Zevia to drink (S) pg. 327 in the old THM book and then just layer it in a slow cooker and cook on low until the cheese is melted.

Saturday:
B - (2) scrambled eggs mixed with cheddar cheese and deli ham with water to drink (S)
L - out to eat
S - almonds and 1/4 c. blueberries with Cider Pop to drink (S)
D - Crock Pot Spinach Lasagna with steamed broccoli on the side with water to drink (S) ***I'm using jarred sauce and 1 lb. of ground beef. If you want to make the sauce according to the recipe, you will need to add those items to the shopping list. I'm using frozen broccoli and steaming.

Sunday:
B - Cran Orange Smoothie (FP)
L - Lovin' Tex Mex Skillet with lettuce on the side with Cider Pop to drink (E) ***I'm substituting 1 lb. of boneless skinless chicken breasts in place of 1 lb. ground beef.
S - small container 0% Plain Greek yogurt mixed with 2 T. peanut butter and 1 t. sweetener with water to drink (S)
D - leftovers or a large salad

S - Peanut Butter Cup Shake (S)
D - Italian White Bean and Spinach Soup with water to drink (E)

Tuesday:
B - Thin Mint Shake (S)
L - Deli ham on a low-carb tortilla with lettuce, mustard, mayo, cheddar cheese and onion with raw vegetables and strawberries on the side with Cider Pop to drink (S)
S - (2) LIght Rye Wasa Crackers topped with a wedge of Light Laughing Cow Cheese with water to drink (FP)
D - Egg Roll in a Bowl with water to drink (S)

Wednesday:
B - (2) scrambled eggs with cheddar cheese and deli ham mixed in with Sweet & Spicy tea to drink (S)
L - leftover Egg Roll in a Bowl with water to drink (S)
S - Snickers Hot Chocolate with strawberries on the side (S)
D - No Tortilla Enchilada Bake with lettuce and sour cream on the side (S) ***Use this recipe for the enchilada sauce and quadruple it 

Thursday:
B - Dannon 000 Vanilla Yogurt mixed with an apple and cinnamon with water to drink (E)
L - leftover No Tortilla Enchilada Bake with Cider Pop to drink (S)
S - (2) Light Rye Wasa crackers topped with a wedge of Light Laughing Cow Cheese with water to drink (FP)
D - Spaghetti and meat sauce with a side salad topped with Ranch dressing and water to drink (S) ***I'm using zucchini noodles as my "pasta". You can make zucchini noodle using this gadget

Friday:
B - Berry Lemon Shake (FP) 
L - Just Like Campbell's Tomato Soup with strawberries on the side with water to drink (S) pg. 112 in the THM Cookbook
S - small handful of almonds, 1 oz. cheddar cheese with Cider Pop to drink (S)
D - Pizza Casserole with fresh veggies on the side with Orange Zevia to drink (S) pg. 327 in the OLD THM book

Saturday:
B - Cheddar, Bacon and Veggie Frittata with Sweet & Spicy tea to drink (S) ***This will feed my whole family
L - out
S - 1/2 c. 2% cottage cheese with an apple and Cider Pop to drink (E)
D - Sweet & Spicy Stir-fry with water to drink (E)

Sunday:
B - Peanut Butter Shake (S)
L - Deli Ham on a low-carb tortilla with lettuce, mustard, mayo, cheddar cheese and onion with fresh veggies and strawberries on the side with water to drink (S)
S - small handful of almonds and 1 oz cheddar cheese with Cider Pop to drink (S)
D - Colorful Lentil Salad with boneless, skinless chicken breasts mixed in with water to drink (E)

I'm back after a blogging hiatus. We welcomed a sweet baby boy, Elijah Dean, on January 10. He is such a joy and we just can't get enough of his snuggles and beautiful face. Thanks for your patience as we transition to a family of 7.

Here's what we'll be eating this week:

Monday:
B - Refreshing Fruity Shake (E)
L - salad with (2) hard-boiled eggs, cheddar cheese and Ranch dressing with water to drink (S)
S - an apple, 1/2 c. of 2 % cottage cheese with Cider Pop to drink (E) 
D - Lazy Lasagna and steamed broccoli (I will be using frozen) with water to drink (S) pg. 140 in the THM cookbook  **This meal makes enough for my whole family to have two complete meals.

Tuesday:
B - (2) Mufflets with Sweet & Spicy tea to drink (S) pg. 237 in the THM cookbook  **This makes enough for my whole family to have two complete breakfasts.
L - leftover Lazy Lasagna with water to drink (S)
S - Peanut Butter Milkshake (S)
D - Lovin' Tex Mex Skillet with lettuce on the side and Cider Pop to drink (E)

Wednesday:
B - leftover (2) Mufflets with Sweet & Spicy tea to drink (S)
L - Cheese quesadilla on a low-carb tortilla with fresh veggies, salsa and guacamole on the side with water to drink (S)
S - Snickers Hot Chocolate (S)
D - Hearty Two Bean and Lentil Chili with water to drink (E)

Thursday:
B - Dannon 000 Vanilla yogurt mixed with an apple and cinnamon with water to drink (E)
L - leftover Two Bean and Lentil Chili with Cider Pop to drink (E)
S - Cottage Berry Whip (FP) ***I'm making a double batch, freezing half and eating it tomorrow
D - Taco Salads - lettuce, ground beef seasoned with taco seasoning and topped with cheese, salsa, guacamole and onion with water to drink (S)

Friday:
B - 1/2 c. old fashioned oats mixed with 1/2 an apple, cinnamon and a tiny bit of sweetener with water to drink (E)
L - Just Like Campbell's Tomato Soup with strawberries on the side and water to drink (S) pg. 112 in the THM Cookbook
S - leftover Cottage Berry Whip with water to drink (FP)
D - Pizza Casserole with fresh veggies on the side with Grape Zevia to drink (S) pg. 327 in the old THM book

Saturday:
B - (2) scrambled eggs topped with cheddar cheese and strawberries on the side with Sweet & Spicy tea to drink (S)
L - out
S - almonds and fresh veggies with Cider Pop to drink (S)
D - Cheese quesadilla on a low-carb tortilla with salsa, guacamole and fresh veggies on the side with water to drink (S)

L - Chicken Noodle Soup with water to drink (E) ***I'll be using brown rice in mine

D - Spaghetti with meat sauce with fresh veggies on the side with Cider Pop to drink (S) ***I'm using Dreamfield's pasta

Tuesday:
B - Reese Peanut Butter Cup Shake (S)
L - leftover Just Like Campbell's Tomato Soup with fresh veggies on the side with water to drink (S)
S - cheese stick and a handful of almonds with Cider Pop to drink (S)
D - Hearty Two Bean and Lentil Chili with water to drink (E)

Wednesday:
B - (3) scrambled eggs with strawberries on the side with Sweet & Spicy tea to drink (S)
L - leftover Hearty Two Bean and Lentil Chili with water to drink (E)
S - an apple with 1 t. of peanut butter with Cider Pop to drink (E)
D - Paprika Chicken served over zucchini noodles with steamed broccoli on the side and water to drink (S) ***Use this gadget to make your zucchini noodles.

Thursday:
B - Vanilla Dannon 000 Greek Yogurt mixed with an apple and cinnamon with water to drink (E)
L - leftover Paprika Chicken and steamed broccoli with water to drink (S)
S - cheese stick and handful of almonds with Cider Pop to drink (S)
D - Zesty Salsa Chicken and Black Bean Casserole with water to drink (E)

Friday:
B - Strawberry Grapefruit Smoothie (E)
L - Large salad topped with (2) hard boiled eggs, cheddar cheese and Ranch dressing with water to drink (S)
S - an apple with 1 t. of peanut butter with Cider Pop to drink (E)
D - Pizza Casserole with fresh veggies on the side with Bai5 Bubbles Jamaican Blood Orange to drink (S) pg. 327 in the original THM book

Saturday:
B - (3) scrambled eggs with strawberries on the side with Sweet & Spicy tea to drink (S)
L - out
S - (2) Light Rye Wasa Crackers with wedge of Light Laughing Cow Cheese with Cider Pop to drink (FP)
