About Me

Hello and welcome to Darcie's Dishes! I'm so glad you found me. As you probably guessed from the title, I'm Darcie. I originally started this blog at the prompting of some friends who needed ideas and help with what to eat every night for dinner. From there it's just exploded into one big meal plan, recipe and frugal tips blog all while eating the Trim Healthy Mama way.

 
 
I've been married to my wonderful husband Rich for over 12 years. No one can make me laugh harder than him. We always have so much fun together! He truly is my best friend. We've been through some great and difficult times along the way, but we've worked really hard to be intentional in our marriage and it is so worth it. I just love him to pieces!
 
 
 
We have four beautiful kids. They keep us on our toes constantly and questioning our sanity, but we love the cuddles, antics and hilarious things that they say. I homeschool them which is such a joy. Don't get me wrong, it definitely has its challenging days, but I wouldn't trade the time I have with them on a daily basis for anything.
 
 
I always love getting to know people and the random things about them, so here's 10 random facts about me:
  1. I love Jesus! He's the best. I would be a hot mess without His forgiveness and grace.
  2. I obviously love to cook. Cooking for people and providing a healthy and wholesome meal brings me so much joy. I love spending time in the kitchen dreaming up new recipes to share with all of you.
  3. Mexican food is my absolute most favorite food in the world! I could literally eat it every day, but try to restrain myself to twice a week.
  4. I LOVE to laugh and make other people laugh. You can tell when I'm super tired because everything is hysterically funny to me. I think my husband initially fell in love with me because I laughed at all his jokes. ;)
  5. I do my best work while listening to jazz. It gives me my "groove".
  6. My dream is to own a small farm/homestead and live off the land as much as possible. People think I'm crazy, but it makes me so excited to think of the possibilities.
  7. I had a home birth with my 4th baby and absolutely loved it!!! If we ever have any more kids, I will do a home birth again. If you're curious about it, I'm happy to relay my experience.
  8. I don't really like chocolate all that much. However, mix it with peanut butter and I'm game!!
  9. I learned the majority of my cooking skills from watching Food Network and reading cookbooks. Thankfully my mom taught me the basics and I just ran from there!
  10. I love to read - mainly cookbooks, Christian fiction and Christian self help books. I don't always have the time because I'm usually reading school books to my kids.

    1. I took December off just with the craziness of holidays and being tired from being pregnant. I will take January off ( or most of it) to adjust to baby #5. Thanks for checking in.

  5. I am so excited my mom told me about your blog!! She passed me a note with a link to one of your meal plans completely written out :) she's the cutest. I am curious to know the ages of your kids, I am a mom of four and wife to an almost "big guy." I love that your dinners feed 6, but was trying to gauge if they feed your six (now 7 congrats) or if they are six full servings? If that makes any sense. My crew is currently [8,8(twins),3,2] I am pescatarian so meatless meals and seafood are big in our house. I love that you have a healthy, mid-large family; it is so hard to find that combo in a blog. Thank you so much for sharing your journey!

    1. My kids are 12, 10, 6, 4 and newborn. All my kids are big eaters. Most of the dinner meals serve 6-8. I hope that helps!

  6. Hey Darcie, I'm so glad Sarah Criddle told me about your blog. I can't stick with THM because the meal lasts a few weeks, then life happens and I'm off it. It then takes me a LONG time to get back on because I keep failing at meal planning. Meal planning is the key to making it work for me. Thank for you for sharing your knowledge and hard work. This is such a blessing for me to find!

    I like the "idea" of planning my meals, but generally only make a plan for several dinners a week and breakfast is usually some form of eggs. I really appreciate your planning and the variety of meals listed. - I did see someone ask last April (2016) of about how much weight you lose weekly or monthly? I know you are certainly in a different phase in your life than me (I am 59 y/o), but wondering if you suggest I tweak your meals or quantities a bit to encourage shedding pounds? TIA

    1. I initially lost 30 lbs. However, I just had my 5th baby in January so now I'm working on getting that weight off. All my meal plans are designed for weight loss. When I lost the 30 lbs I would just eat more crossovers to not lose more. I kept the design of my meal plans for weight loss though so anyone could follow along.
