Quinoa, Kale & White Bean Soup



It has been a rainy and chilly week here in Michigan, and nothing makes me happier in dreary weather than a piping hot bowl of soup. I just love soup for so many reasons. It's very easy to prepare, usually pretty inexpensive to make, feeds a crowd and it makes your house smell amazing. What's not to love?

This soup was very inexpensive to make. I had everything in my pantry or fridge already except the kale. Chances are the same will be true for you too. I love it when a recipe doesn't require me to buy a whole bunch of ingredients. The more simple, the better.

This is a vegetarian recipe, but if you are someone who MUST have meat (or have a hubby that does), boneless skinless chicken breasts would be a great addition. Dice the chicken breast and cook it in the pan at the same time as the vegetables.

For those of you who eat the Trim Healthy Mama way, this soup is an E (with or without the meat).

Quinoa, Kale & White Bean Soup  (THM:E, vegetarian, gluten-free, sugar-free) Serves 6-8

  • 2 t. olive oil
  • (1) large carrot, peeled and diced
  • (1) large celery stalk, diced
  • (1) medium yellow onion, diced
  • (4 ) cloves of garlic, minced
  • 4 c. water
  • 4 c. vegetable stock
  • 1/2 c. quinoa, rinsed very well
  • (2) 15 oz. cans of Great Northern beans, drained and rinsed
  • 2-3 t. of salt, taste and add more salt if needed
  • 1 t. rosemary
  • 1 t. Italian seasoning
  • 3/4 t. onion powder
  • 3/4 t. garlic powder
  • 1 t. black pepper
  • 6 c. kale, hard stem removed and chopped
  • 1 T. red wine vinegar
  1. In a large stock pot, heat the olive oil over medium heat. Add the carrot, celery and onion and saute for about 8 minutes, or until the onion is translucent. Put the garlic in the pan and saute for 1 minute more, stirring constantly.
  2. Pour the water and vegetable stock in the pot and turn on high. Bring to a boil and add the quinoa, beans and seasonings to the pot. Reduce the heat to medium low and cover. Set a timer for 10 minutes.
  3. When the timer goes off, put the kale in the pot, stir, and put the lid back on and set a timer for 15 minutes. 
  4. Once the timer goes off check to see if  the quinoa is cooked completely. If the quinoa is done, turn off the heat and stir in the red wine vinegar and taste. Adjust seasonings if needed.

L - Salad with (2) hard boiled eggs, cheddar cheese and Ranch dressing with strawberries on the side with water to drink (S)
S - Snickers Hot Chocolate (S)
D - Egg Roll in a Bowl with Cider Pop to drink (S)

Tuesday:
B - (2) scrambled eggs cooked in butter and topped with cheddar cheese with strawberries on the side and Hot Cinnamon Spice tea to drink (S)
L - leftover Egg Roll in a Bowl and a small side salad with Ranch dressing with Cider Pop to drink (S)
S - cheese stick and a handful of almonds with water to drink (S)
D - Italian White Bean and Spinach Soup with water to drink (E)

Wednesday:
B - Peanut Butter Cup Shake (S)
L - Colorful Lentil Salad with a diced chicken breast mixed in with Cider Pop to drink (E) ***This will be enough for me to eat for 3 lunches.
S - (2) hard boiled eggs with bell pepper and cucumber slices and water to drink (S)
D - Spaghetti with meat sauce and a small side salad with Ranch with water to drink (S) ***For my noodles I will be eating zucchini noodles made with this gadget. My family will eat them over regular pasta, that is NOT reflected on the shopping list.

Thursday:
B - Strawberry Grapefruit Smoothie (E)
L - leftover Colorful Lentil Salad with water to drink (E)
S - cheese stick and a handful of almonds with Cider Pop to drink (S)
D - Zesty Salsa Chicken and Black Bean Casserole with lettuce on the side and water to drink (E)

Friday:
B - (2) scrambled eggs cooked in butter and topped with cheddar cheese and strawberries on the side with Hot Cinnamon Spice tea to drink (S)
L - leftover Colorful Lentil Salad with Cider Pop to drink (E)
S - Dannon 000 Vanilla Greek Yogurt mixed with a diced apple and cinnamon with water to drink (E)
D - Pizza Casserole with fresh veggies on the side and Gimbi Pink Grapefuit Bai5 Bubbles to drink (S) pg. 327 in the old THM book

Saturday:
B - Fields of Green Omcake with water to drink (S) pg. 240 in the THM Cookbook
L - out
S - cheese stick and a handful of almonds with Cider Pop to drink (S)
D - Chicken Jalapeno Popper Soup with water to drink (S) pg. 90 in the THM Cookbook  ***This makes A LOT of soup. If you have a smaller family, you may want to cut it in half. This will feed my family of 6 two full meals.

Sunday:
B - Peanut Butter Milkshake (S)
L - leftover Chicken Jalapeno Popper Soup with water to drink (S)
S - 1/2 c. 2% cottage cheese with fresh veggies on the side with Cider Pop to drink (FP)
D - Vegetarian Burrito Bowl - black beans, Brown Spanish Rice, lettuce and salsa mixed together with water to drink (E)

D - Taco Salads - ground beef, lettuce, cheddar cheese, sour cream and no sugar added salsa with water to drink (S)

Tuesday:
B - (2) scrambled eggs cooked in butter and topped with cheddar cheese with strawberries on the side with Harney & Son's Hot Cinnamon Spice tea on the side (S)
L - leftover Trim Zuppa Toscana Soup with water to drink (S)
S - (3) leftover Pay Off Day Candies with Cider Pop to drink (S)
D - Sweet & Spicy Stir-fry over brown rice with water to drink (E) ***For the veggies I'll be using frozen broccoli, frozen peas, carrots and a red bell pepper.

Wednesday:

S - Cottage Berry Whip with Cider Pop to drink (FP)

Saturday:

D - Grilled burgers wrapped in lettuce with steamed broccoli with butter and green beans with butter on the side with water to drink (S) ***I'm using frozen broccoli and green beans.

Sunday:
B - 1/2 c. 0% Plain Greek Yogurt mixed with 2 T. peanut butter and 1 t. THM Super Sweet Blend with water to drink (S)
L - Slow Cooker Chicken and Quinoa Chili with water to drink (E)
S - Refreshing Fruit Shake (E)
D - leftovers or a salad with (2) hard-boiled eggs with water to drink

We start our homeschooling year tomorrow, and the first few days always feel a bit chaotic and crazy as everyone is trying to find their groove, me included. This week I'm utilizing my crock pot a lot in an effort to keep dinner time as easy and simple as possible. Most of these meals provide enough to have leftovers for lunch. I am also making snacks that have larger portions, so I can just grab and go. I am trying really really hard to stay on plan 100% this week. Stress and chaos always make it a bit harder for me.

L - Very Berry Salad with Loaded Fotato Soup on the side with water to drink (S) pg. 117 in the THM Cookbook; I'm sharing the salad with a couple of my kids
S - (3) Pay Off Day Candies with water to drink (S) pg. 381 in the THM Cookbook
D - Sweet & Spicy Stir-fry with Cider Pop to drink (E)

Tuesday:
B - Apple Cinnamon Swirl Muffin with water to drink (E) pg. 280 in the THM Cookbook; You can get Baking Blend here
L - High Protein Mediterranean Salad with strawberries on the side and Cider Pop to drink (E) ***This salad is HUGE! I'm making a half batch and it will be enough for my whole family to eat for lunch. I don't have flax oil, so I will be using all olive oil.
S - (3) leftover Pay Off Day Candies with water to drink (S)
D - Barbacoa Beef over lettuce and topped with sour cream and cheddar cheese with water to drink (S)

Wednesday:
B - 0% Plain Greek Yogurt mixed with 2 T. peanut butter and 1 t. THM Super Sweet with Sweet & Spicy tea to drink (S)
L - leftover Barbacoa Beef over lettuce and topped with sour cream and cheddar cheese with water to drink (S)

D - Slow Cooker Italian Beef & Cabbage with broccoli on the side with water to drink (S) ***I'll be heating up frozen broccoli

Thursday:
B - (2) scrambled eggs cooked in butter and topped with cheddar cheese with strawberries on the side with Sweet & Spicy tea to drink (S)
L - leftover Italian Beef & Cabbage with a small side salad dressed with Ranch and water to drink (S)
S - (3) leftover Pay Off Day Candies with Cider Pop to drink (S)
D - Crock Pot Spinach Lasagna with green beans on the side and water to drink (S) ***I'm  using frozen green beans for the side dish.

Friday:
B - 0% Plain Green yogurt mixed with a diced apple, cinnamon and 1 t. THM Super Sweet with water to drink (E)
L - leftover Crock Pot Spinach Lasagna and a small side salad dressed with Ranch with water to drink (S)
S - celery with peanut butter and a small handful of almonds with Cider Pop to drink (S)
D - Pizza Casserole and fresh veggies on the side with Black Cherry Bai5 Bubbles to drink (S) pg. 327 in the old THM Book

Saturday:
B - Cheddar, Bacon and Veggie Frittata with water to drink (S) ***This will feed my whole family.
L - out
S - Peanut Butter Milkshake (S)
D - Trim Zuppa Toscana with water to drink (S) pg. 86 in the THM Cookbook ***I'm going to cut the recipe in half

Sunday:
B - Berry Lemon Shake (FP)

S - celery with (2) wedges of Light Laughing Cow Cheese and Lemon Lime Trim Pop (FP) pg, 443 in the THM Cookbook
D - variety of leftovers from the week
