Meal Plan Monday: 8/29-9/4/16

Here's what we'll be eating this week:

Monday:
B - Frosted Strawberry Limeade (S)
L - (3) hard-boiled eggs mixed with 2 T. mayo and 1 t. mustard, salt and pepper with fresh veggies on the side and water to drink (S)
S - Cottage Berry Whip with water to drink (FP) ***I'm making a double batch and will eat the rest for snack tomorrow. Take it out of the freezer about 10 minutes before you want to eat it.
D - Steak Fajita Salads - marinated steak, lettuce, cheddar cheese, sour cream, fajita peppers and onions and pico de gallo with Cider Pop to drink (S)

Tuesday:
B - (2) scrambled eggs cooked in butter with strawberries on the side with Sweet & Spicy tea to drink (S)
L - leftover Steak Fajita salad with water to drink (S)
S - leftover Cottage Berry Whip with water to drink (FP)
D - Slow Cooker Chicken & Quinoa Chili with Cider Pop to drink (E)

Wednesday:
B - Peanut Butter Milkshake (S)
L - Quinoa Salad topped with canned and drained chicken breast with water to drink (E) pg. 232 in the THM Cookbook. This salad is HUGE, so I'm cutting it in half and eating it for lunch for 3 days.
S - handful of almonds and 1 oz. cheddar cheese with Cider Pop to drink (S)
D - Spaghetti with meat sauce and a side salad with Ranch dressing with water to drink (S) ***I will be using zucchini noodles for my spaghetti. I use this gadget to make them.

Thursday:
B - (2) scrambled eggs cooked in butter with strawberries on the side with Sweet & Spicy tea to drink (S)
L - leftover Quinoa Salad with water to drink (E)
S - Refreshing Fruity Shake (E)
D - Cajun Cream Chicken with steamed frozen broccoli and green beans with water to drink (S) pg. 36 in the THM Cookbook ***I'm going to use chicken thighs and cut the recipe in half.

Friday:
B - Reese Peanut Butter Cup Shake (S)
L - leftover Quinoa Salad with water to drink (E)
S - Winter Wonderland Sip (served cold) with a handful of almonds (S) pg. 405 in the THM Cookbook
D - Perfect Pizza with fresh veggies on the side with Blue Sky Free Cherry Vanilla Cream to drink (S) pg. 211 in the THM Cookbook. ***You can purchase THM Baking Blend here

Saturday:
B - 1/2 c. 0% Plain Greek Yogurt mixed with an apple, cinnamon and 1 t. THM Super Sweet and water to drink (E)
L - out
S - 1/2 c. 1% cottage cheese and fresh veggies with Cider Pop to drink (FP)
D - Beefy & Cheesy Low-Carb Green Chilie Bake with a side salad with Ranch dressing and water to drink (S)

Sunday:
B - 1/2 c. 0% Plain Greek Yogurt mixed with 2 T. peanut butter and 1 t. THM Super Sweet and water to drink (S)
L - Hearty Two Bean and Lentil Chili with water to drink (E)
S - Snickers Hot Chocolate (S) ***I'm actually going to serve this cold over ice.
D - leftover Beefy & Cheesy Low-Carb Green Chili Bake with a side salad with Ranch and Cider Pop to drink (S)

The meal plan this week is VERY budget friendly. We had to utilize part of our grocery budget to another expense this month, so I'm getting creative and working with what I already have on hand in the pantry, fridge and freezer. I did run to the store to buy milk and a few produce items, otherwise we had everything else. This is why I think it is so important to keep a well stocked kitchen. You just never know when you may have a tight month. I can still feed my family healthy meals even when I have less money to spend in any particular month.

Here's what we'll be eating this week:


Monday:

B - (2) scrambled eggs cooked in coconut oil with strawberries on the side and Sweet & Spicy tea to drink (S)
L - Just Like Campbell's Tomato Soup with fresh veggies on the side and Cider Pop to drink (S) pg. 112 in the THM Cookbook
S - (3) Pay Off Day Candies with water to drink (S) pg. 381 in the THM Cookbook
D - Cowboy Grub with water to drink (E) pg. 59 in the THM Cookbook ***This makes a HUGE meal. This is enough for my family to have for two complete meals.

Tuesday:
B - 1/2 c. 0% Plain Greek Yogurt mixed with 2 T. peanut butter and 1 t. THM Super Sweet with strawberries on the side and water to drink (S)
L - leftover Cowboy Grub with water to drink (E)
S - (3) leftover Pay Off Day Candies with Cider Pop to drink (S)
D - Egg Roll in a Bowl with water to drink (S)

Wednesday:

B - (2) scrambled eggs cooked in coconut oil with strawberries on the side with Sweet & Spicy tea to drink (S)
L - Hearty Two Bean and Lentil Chili with water to drink (E) ***This is enough to serve my whole family.
S - (3) leftover Pay Off Day Candies with Cider Pop to drink (S)
D - Taco Salads - ground beef on lettuce topped with cheddar cheese, sour cream and salsa with water to drink (S) ***My kids and husband will have black beans on their salads to make the meat stretch further, this is reflected on the shopping list. I am just having meat.

Thursday:

B - 1/2 c. 0% Plain Greek Yogurt mixed with an apple, cinnamon and 1 t. THM Super Sweet with water to drink (E)
L - Easy Zucchini Noodles for One topped with half can of drained chicken breast with fresh veggies on the side and water to drink (S) ***I use this gadget to make the zucchini noodles.
S - (3) leftover Pay Off Day Candies with Cider Pop to drink (S)
D - Italian White Bean and Spinach Soup with water to drink (E)

Friday:

B - Nana's Fluffy Omelet with strawberries on the side and water to drink (S) pg. 239 in the THM Cookbook
L - Salad topped with half can of drained chicken breast, cheddar cheese and Ranch dressing with water to drink (S)
S - 1/2 c. 1% cottage cheese with fresh veggies on the side with water to drink (FP)
D - Pizza Casserole with Cider Pop to drink (S) pg. 327 in the OLD THM Book

Saturday:

B - 1/2 c. 0% Plain Greek Yogurt mixed with 2 T. peanut butter and 1 t. THM Super Sweet with water to drink (S)
L - Loaded Fotato Soup topped with cheddar cheese with water to drink (S) pg. 117 in the THM Cookbook ***Making a double batch and will eat the rest tomorrow for lunch.
S - Cottage Berry Whip with Cider Pop to drink (FP)
D - Sweet & Spicy Stir-fry served over brown rice with water to drink (E) ***I'm using frozen broccoli, cauliflower, bell peppers and peas for the veggies.

Sunday:

B - (2) scrambled eggs cooked coconut oil with strawberries on the side and Sweet & Spicy tea to drink (S)
L - leftover Loaded Fotato Soup with water to drink (S)
S - Peanut Butter Whip with water to drink (S)
D - Zesty Salsa Chicken & Black Bean Casserole with Cider Pop to drink (E) ***I'm adding another can of black beans in place of the chicken breasts.

L - Salad with (2) hard-boiled eggs and Ranch Dressing with water to drink (S)
S - 1 oz. cheddar cheese with small handful of almonds with Cider Pop to drink (S)
D - Grilled Steak with Pan Roasted Brussel Sprouts and grilled zucchini seasoned with olive oil with salt & pepper with water to drink (S) 

Tuesday:
B - 0% Plain Greek Yogurt mixed with 2 T. peanut butter and 1 t. THM Super Sweet Blend with Sweet & Spicy tea to drink (S)
L - Easy Zucchini Noodles for One with a bit of leftover steak and strawberries on the side with water to drink (S) ***Use this tool to make the zucchini noodles. 
S - Cottage Berry Whip with water to drink (FP) ***I'm making a double batch and eating the rest for snack tomorrow. Just pull it out of the freezer about 7-10 minutes before you want to eat it.
D - Zesty Salsa Chicken & Black Bean Casserole with lettuce on the side with Cider Pop to drink (E)

Wednesday:
B - (2) eggs scrambled with (2) pieces of bacon with Sweet & Spicy tea to drink (S)
L - Just Like Campbell's Tomato Soup with strawberries on the side with water to drink (S) pg. 112 in the Trim Healthy Mama Cookbook
S - leftover Cottage Berry Whip with water to drink (FP)
D - Grilled Teriyaki Marinated Chicken Breasts with 1/2 c. quinoa and steamed broccoli with Cider Pop to drink (E)

Thursday:
B - Blueberry Cheesecake Protein Shake (E)
L - Salad with (2) hard-boiled eggs and Ranch dressing with water to drink (S)
S - 1 oz. cheddar cheese with handful of almonds and water to drink (S)
D - Jalapeno Chicken Bacon Chowder with Cider Pop to drink (S)

Friday:
B - 0% Plain Greek Yogurt mixed with a diced apple, cinnamon and 1 t. of THM Super Sweet  with water to drink (E) 
L - leftover Jalapeno Chicken Bacon Chowder with water to drink (S)
S - celery with peanut butter and Cider Pop to drink (S)
D - Pizza Casserole with fresh veggies on the side with Black Cherry Zevia to drink (S) pg. 327 in the OLD THM book

Saturday:
B - 0% Plain Greek Yogurt mixed with 2 T. of peanut butter and 1 t. of THM Super Sweet (or sweetener of your choice) with water to drink (S)
L - Taco Salad topped with cheddar cheese, sour cream and onion with Black Cherry Zevia to drink (S) ***Save a buck and reduce additives by making your own taco seasoning.
S - 1/2  c. 2% cottage cheese with strawberries on the side with Cider Pop to drink (FP)
D - @ a friend's house for dinner and I'll be bringing a big salad to share

Sunday:
B - 0% Plain Greek Yogurt mixed with 1/2 c. blueberries and 1 t. THM Super Sweet with Sweet & Spicy tea to drink (E)
L - Out ~ We'll be eating at Qdoba and I'm getting a burrito bowl with brown rice, chicken, fajita veggies, pico de gallo, salsa verde, their hot salsa (can't remember the name) and lettuce. I split this with my son, otherwise it's WAY too much food. (E)
S - string cheese with small handful of almonds with Cider Pop to drink (S)
D - Creamy Broccoli Soup with water to drink (S)

Tuesday:
B - (2) scrambled eggs with strawberries on the side with Sweet & Spicy tea to drink (S)
L - salad with sunflower seeds, Feta cheese and leftover Italian Vinaigrette Dressing with water to drink (S)
S - 1/2 c. 0% Plain Greek Yogurt mixed with 2 T. peanut butter and 1 t. THM Sweet Blend with water to drink (S) 
D - Cab and Saus Skillet with broccoli on the side with Cider Pop to drink (S) pg. 58 in the THM Cookbook

Wednesday:
B - Peanut Butter Milkshake (S)
L - leftover Cab and Saus skillet with strawberries on the side with Cider Pop to drink (S)
S - Cottage Berry Whip with water to drink (FP) *I'm making a double batch and will eat the other half for snack tomorrow. Store it in the freezer and take it out of the freezer about 10 minutes before you want to eat it.
D - out

Thursday:
B - Pumpkin Pie Shake (S)
L - Deli ham on a low-carb tortilla with mustard, mayo and lettuce with strawberries on the side with water to drink (S)
S - leftover Cottage Berry Whip with water to drink (FP)
D - Mama's 3 Bean Chicken Chili in the crock pot with Cider Pop to drink (E)

Friday:
B - (2) scrambled eggs with cheddar cheese, green peppers and onions mixed in with Sweet & Spicy tea to drink (S)
L - leftover Mama's 3 Bean Chicken Chili with water to drink (E)
S - 1/2 c. 0% Plain Greek Yogurt mixed with 1/2 c. blueberries and 1 t. THM Sweet Blend with water to drink (E) 
D - Pizza Casserole in the crock pot with fresh veggies on the side and Grape Zevia to drink (S)

Saturday:
B - (2) Pumpkin Muffins with Sweet & Spicy tea to drink (S) 
L - High Protein Mediterranean Salad with water to drink (E) ***This salad is HUGE! It can feed my family of 6 easily for two meals. I'm adding one cooked and diced boneless, skinless chicken breast to it as well. I don't have any flax oil so I will be using all olive oil instead.
S - 1/2 c. of 0% Plain Greek Yogurt mixed with 2 T. peanut butter and 1 t. THM Sweet Blend with Cider Pop to drink (S)
D -  Italian White Bean and Spinach Soup with water to drink (E) 

Sunday:
B - (2) leftover Pumpkin Muffins with water to drink (S)
L - leftover High Protein Mediterranean Salad with Cider Pop to drink (E)
S - 1/2 c. 2 % cottage cheese and strawberries with water to drink (FP)
D - Salad topped with deli ham, cheddar cheese and Ranch dressing with water to drink (S)
