Meal Plan Monday: 7/18-7/24/16

I'm desperately trying to up my water and liquid intake. Especially with it being so hot right now, it's very important to stay hydrated. I'm loving these packets from True Lemon, my favorite flavors are the black cherry and watermelon. They do have 1g of sugar in them, but are plan approved per THM as the amount of sugar in them won't impact blood sugar.

Here's what we'll be eating for the week:

Monday:
B - (2) scrambled eggs cooked in coconut oil with (2) pieces of bacon and strawberries on the side with water to drink (S)
L - Waldorf Cottage Cheese Salad with Cider Pop to drink (E) pg. 190 in the NEW THM Cookbook
S - (3) Pay Off Day Candies with water to drink mixed with a True Lemon Packet (S) pg. 381 in the NEW THM Cookbook
D - Egg Roll in a Bowl with water to drink (S)

Tuesday:
B - Peanut Butter Milkshake (S)
L - Quinoa Salad with water to drink (E) pg. 232 in the NEW THM Cookbook ***I'm making a half batch of this and will eat it for 3 days for lunch.
S - (3) leftover Pay Off Day Candies with Cider Pop to drink (S)
D - Spaghetti with meat sauce served over zucchini noodles and a small side salad with Ranch dressing with water to drink mixed with a True Lemon Packet (S) ***I use this gadget to make my zucchini noodles. Also, my kids will still eat theirs over regular pasta, but that is not reflected on the shopping list.

Wednesday:
B -  1/2 c. plain 0% Greek Yogurt mixed with 2 T. peanut butter and 1 t. THM Super Sweet blend with water to drink (S)
L - leftover Quinoa salad with Cider pop to drink (E)
S - (3) leftover Pay Off Day Candies with water to drink (S)
D - Chicken Fajita Wet Burritos with lettuce and sour cream on the side with water to drink (S) ***I use this enchilada sauce over top of a low-carb tortilla to make the wet burrito.

Thursday:
B - 1/2 c. plain 0% Greek Yogurt mixed with an diced apple, cinnamon and 1 t. THM Super Sweet blend with water to drink (E)
L - leftover Quinoa Salad with water to drink (E)
S - (3) leftover Pay Off Day Candies with Cider Pop to drink (S)
D - Sweet & Spicy Stir-fry served over brown rice with water to drink (E)

Friday:
B - Refreshing Fruity Shake (E)
L - Salad with (2) hard-boiled eggs, cheddar cheese and Ranch dressing with water to drink (S)
S - celery with peanut butter and Cider Pop to drink (S)
D - Pizza Casserole with fresh veggies on the side with Jamaican Blood Orange Bai5 Bubbles to drink (S) pg. 327 in the OLD THM book

Saturday:
B - (2) scrambled eggs cooked in coconut oil and (2) pieces of bacon with strawberries on the side with water to drink (S)
L - out
S - 1/2 c. plain 0% Greek Yogurt mixed with 2 T. peanut butter and 1 t. THM Super Sweet blend and Cider Pop to drink (S)
D - Simply Delicious Marinated chicken breasts with Mediterranean Pasta Salad and steamed broccoli with butter and water to drink (S)

Sunday:
B - Reese Peanut Butter Cup Shake (S)
L - leftover marinated chicken mixed into leftover Mediterranean Pasta Salad with water to drink (S)
S - Cottage Berry Whip (FP)
D - Zesty Salsa Chicken & Black Bean Casserole with lettuce on the side and Cider Pop to drink (E) ***I'm going to omit the chicken and add an extra can of black beans.

Mediterranean Pasta Salad

I love pasta salad! To me it is quintessential summer food, especially when you can add veggies straight from your own garden. Yum! Since starting to eat the Trim Healthy Mama way in August of 2013, I've missed regularly making pasta salad. I used to make the boxed kind, but that is definitely not on plan. Well after many times of tweaking the dressing for this salad, I got it right! By using Dreamfields Pasta, this salad is completely on plan and absolutely delicious. No one in my family could tell that I used a low-carb pasta. Win for Mama!

Mediterranean Pasta Salad (THM:S)  Makes 8 side dish portions

  • (1) 13.25 oz. box of Dreamfields Pasta (any cut is fine, I used Penne this time)
  • (1) large tomato, diced
  • (1) bell pepper, any color, diced
  • (10) slices pepperoni or turkey pepperoni, quartered
  • 1/2 c. olive oil (or extra virgin olive oil if you prefer)
  • 1 T. balsamic vinegar
  • 2 garlic cloves, minced
  • 1/2 t. basil
  • 1/2 t. oregano
  • salt & pepper to taste
  • 1/4 c. Feta cheese
  • Optional veggies to mix in: chopped black olives, small diced red onion, chopped roasted red peppers
  1. Prepare the pasta according to the package's directions.
  2. Cut the vegetables and the pepperoni and place in the bottom of a large mixing bowl.
  3. In a small bowl whisk together the olive oil, balsamic vinegar, garlic and spices and set aside.
  4. Once the pasta is done cooking, drain well and let it cool completely. Once it is cool, add it to the vegetables and pepperoni. 
  5. Whisk the dressing once more and pour over top of the pasta and vegetables. Add half of the Feta cheese and stir. Add the other half of the Feta cheese and stir again. Chill in the refrigerator for an hour before serving.
***This salad will stay good in your fridge for up to 3 days.***

Monday:

L - Big Salad with hard-boiled egg, cheddar cheese and Ranch dressing with water to drink (S)
S - Cottage Berry Whip with water to drink (FP) ***I made a double batch and put half in the freezer for snack tomorrow.
D - Grilled Chicken with zucchini noodles and fresh cut up veggies dipped in Ranch with Cider Pop to drink (S)

Tuesday:
B - 1/2 c. plain 0% Greek Yogurt mixed with 2 T. peanut butter and 1 t.  THM Super Sweet Blend with water to drink (S)
L - Waldorf Cottage Cheese Salad with Cider Pop to drink (E) pg. 190 in the NEW THM Cookbook
S - leftover Cottage Berry Whip with water to drink (FP)
D - "Spaghetti" with Meat Sauce and steamed broccoli with water to drink (S) ***I use 1 medium zucchini for the noodles for myself, and the rest of my family eats it over whole wheat pasta. 

Wednesday:
B - (2) scrambled eggs and (2) pieces of bacon with Sweet & Spicy tea to drink (S)
L - Just Like Campbell's Tomato Soup with fresh strawberries on the side with Cider Pop to drink (S) pg. 112 in the NEW THM Cookbook
S - 0% Plain Greek Yogurt sweetened with 1 t. of THM Sweet Blend and 2 T. of peanut butter mixed in with water to drink (S)
D - Cabbage Rolls with green beans and butter with water to drink (S) pg. 312 in the OLD THM Book ***This will be almost enough for two full meals for my family

Thursday:
B - Peanut Butter Milkshake (S)
L - leftover Cabbage Rolls and green beans with Cider Pop to drink (S) *This will feed me and my 4 kids for lunch.
S - 1/2 c. 0% Plain Greek Yogurt mixed with 1 t. THM Super Sweet Blend and 1/3 c. blueberries with water to drink (FP) 
D - Taco Salad topped with cheddar, sour cream and enchilada sauce with Grapefruit Bai5 Bubbles to drink (S)

Friday:
B - Thin Mint Shake (S)
L - Loaded Fotato Soup with strawberries on the side with Cider Pop to drink (S) pg. 117 in the NEW THM Cookbook
S - 1/2 c. 0% Plain Greek Yogurt mixed with 1 t. THM Super Sweet Blend, an apple and cinnamon with water to drink (E) 
D - Pizza Casserole with fresh veggies on the side with Black Cherry Bai5 Bubbles to drink (S) pg. 327 in the OLD THM Book *I only use 1lb. of ground beef 

Saturday:
B - (2) scrambled eggs and (2) pieces of bacon with water to drink (S) ***This will feed my family of 6.
L - Grilled burgers and hot dogs (without a bun for me), No Pasta Salad, cut up veggies and No Bake Blueberry Cheesecake Bars with Black Cherry Zevia to drink (S) *This will feed my family of 6 and then some.
S - leftover No Bake Blueberry Cheesecake Bar with water to drink (S)
D - leftovers from lunch (S)

Sunday:
B - 1/2 c. 0% Plain Greek Yogurt mixed with 1 t. THM Super Sweet Blend and strawberries and 1/4 c. blueberries with water to drink (E)
L - out
S - leftover No Bake Blueberry Cheesecake Bar with water to drink (S)
D - Big Salad with hard-boiled egg, cheddar cheese and Ranch dressing with Cider Pop to drink (S)
