Italian White Bean and Spinach Soup




It's definitely soup weather here in Michigan. To me nothing says comfort more than a bowl of piping hot soup. My husband gets really bored with eating the same soup over and over again, so I'm always trying to come up with new combinations.

This soup is meatless, but you could easily add some cooked boneless, skinless chicken breast or 97% ground turkey. It definitely helps to stretch you grocery money to keep it meatless, but I definitely understand that some people think they need meat with every meal. ;)

This soup freezes and reheats well, so make a double batch and stick in the freezer for a night when you need a quick dinner.

For those of you that follow Trim Healthy Mama, this is an E meal.

Italian White Bean and Spinach Soup (Serves 4-6)
  • 1 T. olive oil or butter
  • (1) medium onion, diced
  • (2) large carrots, peeled and diced
  • (1) medium zucchini, diced
  • (2) cloves of garlic, minced
  • 2 c. of vegetable (or chicken) broth
  • 2 c. of water
  • 14 oz. can of diced tomatoes
  • (2) 15 oz. cans of Great Northern or cannellini beans
  • 1 T. Italian seasoning
  • 1 1/2 t. salt
  • 1/2 t. black pepper
  • bay leaf
  • 3 dashes of red pepper flakes (if you don't like spice then just omit)
  • 3 handfuls of spinach leaves
  1. In a large pot heat the oil or butter over medium heat. Add the onion, carrots and zucchini and sauté until the onion is translucent, about 8 minutes. Add the garlic and sauté for 2 minutes more.
  2. Add the broth, water, tomatoes, beans and seasonings to the pot. Bring to a boil and then reduce the heat to medium low and simmer for 15 minutes.
  3. Put the spinach in the pot and continue to simmer for 10 minutes. Serve.

I'm trying to make a couple of new recipes each week from the NEW Trim Healthy Mama cookbook. Last week my favorite thing that I tried was the Winter Wonderland Sip. IT IS AMAZING!! It tastes like everything that is right about Christmas, but I can drink it year round. It's on pg. 405. Try it if you haven't yet!!

Tuesday:
B - (2) Mufflets with Sweet & Spicy tea to drink (S) pg. 237 in the NEW THM cookbook. ***This recipes makes enough to serve my family of six for two breakfasts.
L - leftover Barbacoa Beef over lettuce with tomatoes, cheddar cheese and sour cream with Cider Pop to drink (S)
S - celery with peanut butter and Winter Wonderland Sip (S) pg. 405
D - Baked Spaghetti "Zoodle" Casserole with side salad dressed with oil and red wine vinegar and water to drink (S)

Wednesday:
B - (2) leftover Mufflets with Sweet & Spicy tea to drink (S)
L - leftover Baked Spaghetti "Zoodle" Casserole with strawberries on the side and water to drink (S)
S - (3) Pay Off Day Candies with Cider Pop to drink (S) pg. 381 in the NEW THM cookbook. Use THM Gentle Sweet for best results. I made it with another sweetener and it tasted fine but had a bitter after taste, not so with the Gentle Sweet though.
D - Hearty Two Bean and Lentil Chili with water to drink (E)

Thursday:

L - leftover Hearty Two Bean and Lentil Chili with Cider Pop to drink (E)

D - Philly Cheesesteak Casserole with side salad dressed with red wine vinegar and oil with water to drink (S) ***I'm omitting the mushrooms because we don't care for them, so if you'd like them make sure you add it to the shopping list.

Friday:
B - Peanut Butter Cup Shake (S)
L - Black Bean Quesadillas with strawberries and fresh veggies on the side with Cider Pop to drink (E) ***This will feed my family of 6.
S - (3) leftover Pay Off Day Candies with water to drink (S)
D - Pizza Casserole with fresh veggies on the side and Black Cherry Zevia to drink (S) pg. 327 in the OLD THM book. ***At the time of this posting there is a 20% off coupon on Zevia right now on Amazon, so if you've been wanting to try it, now may be your time.

Saturday:
B - Ice Cold Fruit Smoothie (E) ***I'm omitting the cantaloupe because I couldn't find any that looked good at the store.
L - Out to eat
S - Snickers Hot Chocolate (S)
D - Chicken Noodle Soup with Cider Pop to drink (E) ***I'm using brown rice in place of the noodles.

Sunday:
B - (2) scrambled eggs with strawberries on the side and Winter Wonderland Sip to drink (S)
L - leftover Chicken Noodle Soup with water to drink (E)
S - Cottage Berry Whip (FP)
D - Loaded Spaghetti Squash Casserole and a side salad dressed with red wine vinegar and oil with Cider Pop to drink (S) ***I'm adding 1 1/2 lbs. of diced chicken breasts to the casserole to make it a complete meal.

D - Mexican Night at our Small Group. I'm bringing 1# of taco meat and also some toppings. I'm going to make a taco salad. This night will be much easier for me to stay on plan than others.

Here's what we'll be eating this week:
Monday:
B - (2) Mufflets with Sweet & Spicy tea to drink (S) pg. 237 in the new Trim Health Mama cookbook. The recipe makes 16, so half of my family and I ate them today and will eat the other half tomorrow. I think you could freeze them once they've been baked and pull out what you need and that would make for a very simple breakfast. They are so good!!
L - Just Like Campbell's Tomato Soup with fresh veggies on the side with water to drink (S) pg. 112 in the new THM cookbook
S - 2 c. air-popped popcorn and 1/4 c. 2% cottage cheese with water to drink (E)
D - Taco salad topped with ground beef, cheddar cheese, salsa and sour cream with Cider Pop to drink (S)

Tuesday:
B - (2) leftover Mufflets with Sweet & Spicy tea to drink (S)
L - Trim Mac Salad with Cider Pop to drink (S) pg. 181 in the new THM cookbook. This is a bigger salad so I'm cutting it in half and will eat it a couple of days for lunch. I'm going to assemble the salad each day so the lettuce doesn't get soggy and gross.
S - Cottage Berry Whip with water to drink (FP) ***I'm making a double batch and will eat the other half tomorrow. Just freeze the other half and pull it out about 10 minutes before you want to eat it.
D - Zesty Salsa Chicken and Black Bean Casserole with water to drink (E)

Wednesday:
B - 1/2 c. 0% Plain Greek Yogurt mixed with 2 T. of peanut butter and 1 t. THM Gentle Sweet with water to drink (S)
L - leftover Trim Mac Salad with Cider Pop to drink (S)
S - leftover Cottage Berry Whip with water to drink (FP)
D - Lentil Soup for the Soup with water to drink (E)

Thursday:
B - Cinnamon Apple Swirl Yogurt with water to drink (E) pg. 250 in the old THM book

D - My husband and I are attending a benefit fundraiser that has a dinner as part of the night.

B - 0% Greek Yogurt sweetened with 1 t. THM Gentle Sweet and mixed with strawberries and chopped almonds with water to drink (S)
L - Sriracha Egg Salad on top of lettuce with fresh veggies on the side with Cider Pop to drink (S)
S - celery with 2 T. of peanut butter with water to drink (S)
D - Pizza Casserole with fresh veggies on the side with a Black Cherry Bai5 Bubbles to drink (S) pg. 327 in the old THM book

Saturday:

L - Trim Zuppa Toscana with water to drink (S) pg. 86 in the new THM cookbook
S - strawberries and a handful of almonds with water to drink (S)
D - Chicken Stir-fry over brown rice with Cider Pop to drink (E) **I'm using frozen broccoli, frozen peas, carrots, an onion and a red bell pepper for the veggies in the stir-fry.

Sunday:
B - Berry Lemon Shake (FP)
L - leftover Zuppa Toscana with water to drink (S)
S - cheese stick and small handful of almonds with Cider Pop to drink (S)
D - Small Group at church and the theme is soups, I'm going to bring Jalapeno Chicken Bacon Chowder (S)

Lovin' Tex Mex Skillet

I have a thing for Tex Mex food. I just can't get enough of it. You'll notice that a lot of recipes I create are a version of Tex Mex. I'm always trying to recreate the flavors that I LOVE so much.

This skillet is so simple, yet so full of flavor. Your family will ask you to make it again and again. I created this Tuesday, and my kids have asked me every night since to make it again. I told them we need at least a week in between. :) I hope your family loves it just as much as mine does.

Lovin' Tex Mex Skillet (THM: E, Gluten-free, Sugar-free) Serves 4-6
  • 1 c. brown rice, uncooked
  • (1) green bell pepper, diced
  • (1) medium onion, diced
  • (3) cloves of garlic, minced
  • 1# lean ground beef or 99% lean ground turkey ***If you use ground beef you will need to rinse it under hot water for about two minutes to help keep this meal in an E territory. Refer to page 188 in the NEW THM Plan book for more info.
  • juice from half of a lime
  • 2 T. taco seasoning
  • 1/4 c. water
  • 15 oz. can of tomato sauce
  • 2 T. cilantro, optional for garnish
  • green onions, optional for garnish
  1. Bring 2 c. of water to a boil. Add the brown rice and a pinch of salt, return to a boil, place the lid on and turn down to a simmer. Cook until rice is done, about 40-45 minutes.
  2. Meanwhile in a large skillet over medium heat add 1 t. of oil to the pan. Add the bell pepper and onion to the pan. Sauté until the onion is translucent. Add the garlic and sauté for one minute. 
  3. Add the ground beef or turkey to the pan and cook until done. ***If you are using ground beef, make sure you rinse it under hot water once you are done. The easiest way to do this is to put it in a strainer and rinse under hot water for about two minutes.
  4. Put the beef back in the skillet and add the lime juice, taco seasoning and water and stir to combine. Let simmer about 5 minutes.
  5. Add the tomato sauce and simmer for 10 minutes. Serve immediately and top with cilantro and green onion.

L - Chicken Noodle Soup with water to drink (E) ***I made this with brown rice, but if you use the Dreamfield's noodles then it is a FP. Also, this served my whole family.
S - 1 oz. cheddar cheese and small handful of almonds with Cider Pop to drink (S)
D - Slow Fajitas served over a bed of lettuce and topped with cheddar and sour cream with water to drink (S) pg. 53 in the NEW THM cookbook and I used beef

Tuesday:
B - Creamy Key Lime Shake (S) pg. 408 in the NEW THM cookbook
L - Black Bean Chicken Quesadilla with fresh veggies on the side with Cider Pop to drink (E) *** This will feed my four kids and me.
S - 1/3 c. 0% Plain Greek Yogurt mixed with 2 T. peanut butter and 1-2 t. THM Sweet Blend with water to drink (S)
D - White Chicken Lasagna Soup with water to drink (S)

Wednesday:
B - (2) Mufflets with Sweet & Spicy tea to drink (S) pg. 237 in the NEW THM cookbook. This makes 16, so my kids whole family will eat these and we'll still have enough leftover for me to eat 2 tomorrow.
L - Deli ham on a low-carb tortilla with cheddar cheese, mayo, mustard, lettuce and onion with fresh veggies and strawberries on the side with water to drink (S)
S - Snickers Hot Chocolate (S)
D - Copycat Olive Garden Minestrone Soup with water to drink (E) ***Use only 1 T. of oil when sautéing the veggies. If you'd like to keep the pasta in the soup then use Dreamfield's. I'm omitting the pasta.

Thursday:
B - (2) leftover Mufflets with Sweet & Spicy tea to drink (S)
L - leftover Olive Garden Minestrone Soup with water to drink (E)
S - Peanut Butter Whip with water to drink (S)
D - Green Chile Chicken Casserole with water to drink (S)

Friday:
B - Peanut Butter Milkshake (S)
L - Salad with (2) hard boiled eggs dressed with Ranch dressing with Cider Pop to drink (S)
S - small handful of almonds and strawberries with water to drink (S)
D - Pizza Casserole with fresh veggies on the side with Bai5 Bubbles Grapefruit to drink (S) pg. 327 in the OLD THM book

Saturday:

L - @ a family birthday party, not sure what is being served but will do my best to stay on plan
S - 1/3 c. 0% Plain Green Yogurt mixed with 2 T. peanut butter and sweetened with 1-2 t. of THM Sweet Blend with water to drink (S)
D - Quinoa Risotto with Garlic Chicken and a small side salad dressed with red wine vinegar with water to drink (E)

Sunday:
B - Thin Mint Shake (S)
L - leftover Quinoa Risotto with Garlic Chicken with water to drink (E)
S - cheese stick and 10 turkey pepperoni with water to drink (S)
D - We have small group at our church and the theme is appetizers. I'm bringing veggies and Mrs. Criddle's French Onion Dip (S)
