Meal Plan Monday: 8/31-9/6/15

I've gotten quite a few questions about how many does my meal plan feed and how does that go along with the shopping list. I thought I'd write it all out here, so hopefully this will help clear up any questions. All my breakfasts, lunches and snacks are portioned for just me, unless otherwise noted. All dinners are portioned for my family of six (two adults and four kids aged 10, 8, 4 and 2). Even though my kids are young they are big eaters.

Here's what we'll be eating this week:

Monday:
B - (2) scrambled eggs with strawberries on the side and Sweet & Spicy tea to drink (S)
L - Loaded Fotato Soup with fresh veggies on the side with water to drink (S) pg. 294  ***I made a double batch and will eat the other half tomorrow for lunch.
S - Fruity Blend Yogurt with water to drink (E) pg. 251
D - Grilled burgers topped with caramelized onions with green beans and Colorful Coleslaw on the side with Cider Pop to drink (S)

Tuesday:
B - Thin Mint Shake (S)
L - leftover Loaded Fotato Soup with fresh veggies on the side and water to drink (S)
S - (2) Peanut Butter Cups with water to drink (S) ***This makes a batch of 12, so I will eat them for most of my snacks this week as long as my kids don't eat them first. ;)
D - Stuffed Cabbage the Easy Way with Cider Pop to drink (E)

Wednesday:
B - (2) scrambled eggs with strawberries on the side with Sweet & Spicy tea to drink (S)
L - Creamy Broccoli Soup with water to drink (S) ***This will feed the 5 of us that are home for lunch.
S - leftover peanut butter cups with water to drink (S)
D - Chicken Lo Mein made with Not-Naughty-Noodles with Cider Pop to drink (FP) ***I double this recipe to serve my whole family.

Thursday:
B - Green Smoothie (E) ***Omit the banana
L - Egg Salad with fresh veggies on the side with Cider Pop to drink (S) ***To make my egg salad I just dice up some hard-boiled eggs, add a couple of tablespoons of real mayo and a squirt or two of mustard and salt and pepper to taste. Very simple!
S - leftover Peanut Butter Cups with water to drink (S)
D - Spaghetti with meat sauce over zucchini noodles with a small side salad dressed with olive oil and red wine vinegar with water to drink (S) ***To make the zucchini noodles I use this gadget. The rest of my family will eat theirs with whole wheat noodles.

Friday:
B - Peanut Butter Milkshake (S)
L - leftover Egg Salad with fresh veggies and Cider Pop to drink (S)
S - Cottage Berry Whip (FP) ***I always make a double batch and eat the rest for snack another day. It freezes beautifully and then I just pull it out about 10 minutes before I want to eat it.
D - Pizza Casserole with fresh veggies with Black Cherry Zevia to drink (S) pg. 327

Saturday:
B - Zucchini Fritter with strawberries on the side with Sweet & Spicy tea to drink (S) pg. 217
L - Colorado White Chili with water to drink (E) ***Omit the corn and add a bell pepper when you are sautéing the onion. This makes plenty so there will be leftovers.
S - leftover Cottage Berry Whip with water to drink (FP)
D - out

Sunday:
B - Fruity Blend Yogurt with water to drink (E) pg. 251
L - leftover Colorado White Chili with water to drink (E)
S - string cheese with turkey pepperoni slices with Cider Pop to drink (S)
D - Boneless Wings on a low-carb tortilla filled with onion, lettuce, celery and Ranch dressing with water to drink (S) pg. 324

Hearty Two Bean and Lentil Chili

I've had Fall on the brain this week. We had cooler than normal temperatures so that just sent my mind directly to Fall. With the cooler temps I thought soup would be a good way to warm everyone up.

This chili is very hearty, filling and packed with protein, yet still low fat. If you eat the Trim Healthy Mama way this is an E meal. Chances are you already have most or all the ingredients in your pantry already. There is no meat in this chili so it cost me less than $5 to make and we got 10 servings out of it. It's a great budget stretching meal that doesn't taste cheap in the slightest. All four of my kids (even the picky eater) gobbled this up and it got the hubby thumbs up as well. No one commented about the lack of meat. I would call that a winner!

If you have a smaller family and can't eat 10 servings before it goes bad, stick the rest in the freezer. It thaws and reheats beautifully.

Printable Recipe
Hearty Two Bean and Lentil Chili (THM: E, low-fat, sugar-free, gluten-free)
  • 1 T. olive oil
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 4 cloves of garlic, minced
  • 1 T. + 1 t. of chili seasoning
  • 4 c. of FF chicken stock
  • 4 c. of hot water
  • 1/2# dry green or brown lentils, rinsed well
  • (1) 15 oz. can of kidney beans, drained and rinsed
  • (1) 15 oz. can of Great Northern Beans, drained and rinsed
  • (2) 14 oz. cans of diced tomatoes with their juices
  • 1 1/2-2 t. salt
  • 1/2 t. black pepper
  • 0% Plain Greek Yogurt, mozzarella cheese or green onions, optional toppings for serving
  1. In a large pot, heat the olive oil over medium heat. Add the onion and green pepper and sauté until the onion is translucent, about 8 minutes. Add the garlic and chili seasoning and cook for 1 minute more, stirring the whole minute.
  2. Add the chicken stock, water, lentils, beans, tomatoes, salt and pepper to the pot and bring to a boil. Once the chili is boiling, turn it down to medium low and simmer uncovered 25-30 minutes, until the lentils are tender but not mushy. Turn off the heat.
  3. With an immersion blender on low in the chili blend for 20 seconds. If you do not own an immersion blender, remove 3 c. of the chili and put in a blender or food processor and process or blend on low for 20 seconds. Pour the 3 c. of chili back into the pot and stir to combine. Top with a dollop of 0% Plain Greek Yogurt or a small pinch of mozzarella cheese right before serving.

Tuesday:
B - Chocolate Milkshake (S)
L - Easy Zucchini Noodles for One with 1/2 can of canned chicken on top with Cider Pop to drink (S)
S - Fruity Blend Yogurt with water to drink (E) pg. 251
D - Fajita Grilled Steak Salad topped with Fajita peppers and onions, sour cream, cheddar cheese (S) ***DO NOT marinate the meat and vegetables in the same container. This leads to cross contamination.

Wednesday:
B - (2) scrambled eggs with strawberries on the side with Sweet & Spicy tea to drink (S)
L - High Protein Mediterranean Salad with water to drink (E) ***I'm going to make a half batch, but it will be enough to feed my two girls and I for 3 meals. I don't have any flax oil so I'm using all olive oil.
S - Cottage Berry Whip (FP) ***I'm making a double batch and will eat the other half for snack tomorrow.
D - Bacon Chicken Ranch Soup with water to drink (S) ***I'm omitting the mushrooms because my family does not care for them, but if you do like them make sure you add them to your shopping list.

Thursday:
B - Fruity Blend Yogurt with water to drink (E) pg. 251
L - leftover High Protein Mediterranean salad with Cider Pop to drink (E)
S - leftover Cottage Berry Whip with water to drink (FP)
D - Boneless Wings on a low-carb tortilla with lettuce and Ranch dressing and fresh veggies and strawberries on the side with Blue Sky Creamy Root Beer to drink (S) pg. 324

Friday:

B - 0% Plain Greek Yogurt mixed with 2 T. peanut butter and 1 t. THM Sweet Blend with water to drink (S)
L - leftover Minestrone Soup with Cider Pop to drink (E)
S - string cheese with 10 turkey pepperoni with water to drink (S)
D - Spaghetti  Zoodles (zucchini noodles) with meat sauce with fresh veggies on the side with water to drink (S) ***Use this gadget (or a similar one) to make the zoodles.

B - Blueberry Cheesecake Protein Shake (E) ***Use a wedge of Light Laught Cow Cheese in place of the instant pudding.

S - string cheese with 10 slices of turkey pepperoni with Cider Pop to drink (S)
D - All Day Lentil or Chana Dahl Soup with small side salad dressed with red wine vinegar and water to drink (E) pg. 311 ***I will be using Chana Dahl.

D - Steak with Pan Roasted Brussell Sprouts and sautéed zucchini and egg plant in olive oil with salt & pepper with water to drink (S) ***The egg plant was disgusting sautéed so I'm leaving it off the shopping list.

Tuesday:
B - 0% Plain Greek Yogurt mixed with 2 T. peanut butter and 1 t. THM Gentle Sweet (or sweetener of your choice) with Sweet & Spicy tea to drink (S)
L - Easy Zucchini Noodles for One with strawberries and 1/2 c. of 2% cottage cheese on the side with water to drink (S) ***Use this tool to make the zucchini noodles.
S - Cottage Berry Whip with water to drink (FP) ***I'm making a double batch and eating the rest for snack tomorrow. Just pull it out of the freezer about 7-10 minutes before you want to eat it.
D - Zesty Salsa Chicken & Black Bean Casserole with lettuce on the side with Cider Pop to drink (E)

Wednesday:
B - (2) eggs scrambled with turkey bacon with Sweet & Spicy tea to drink (S)
L - Just Like Campbell's Tomato Soup with strawberries on the side with water to drink (S) pg. 292

S - 1/2  c. 2% cottage cheese with strawberries on the side with Cider Pop to drink (FP)
D - @ a family birthday party

Sunday:
B - Fruity Blend Yogurt with Sweet & Spicy tea to drink (E) pg. 251
L - Out ~ We'll be eating at Qdoba and I'm getting a burrito bowl with brown rice, chicken, fajita veggies, pico de gallo, salsa verde, their hot salsa (can't remember the name) and lettuce. I split this with my son, otherwise it's WAY too much food. (E)
S - string cheese with small handful of almonds with Cider Pop to drink (S)
D - Creamy Broccoli Soup with water to drink (S)

Trim Healthy Mama Salads and Dressings Roundup



I love salads but let's face it, they can get pretty boring to eat after a while. I wanted to create a list of salads to draw from when I'm feeling like I can't eat one more regular lettuce salad or I just might faint. With the help of my blogging friends, I've compiled this list of a wide variety of salads (not just lettuce) and dressings as well.
