Meal Plan Monday: 10/5-10/11/15

My meal plans are always free and available anytime by clicking on the meal plan tab at the top. All breakfasts, lunches and snacks are portioned for one, unless otherwise noted. All dinners are portioned for six.

Here's what we'll be eating this week:

Monday:
B - (2) scrambled eggs cooked in coconut oil with strawberries on the side with Sweet & Spicy tea to drink (S)
L - Chicken Noodle Soup with water to drink (E) ***I made this with brown rice, but if you use the Dreamfield's noodles then it is a FP. Also, this served my whole family.
S - 1 oz. cheddar cheese and small handful of almonds with Cider Pop to drink (S)
D - Slow Fajitas served over a bed of lettuce and topped with cheddar and sour cream with water to drink (S) pg. 53 in the NEW THM cookbook and I used beef

Tuesday:
B - Creamy Key Lime Shake (S) pg. 408 in the NEW THM cookbook
L - Black Bean Chicken Quesadilla with fresh veggies on the side with Cider Pop to drink (E) *** This will feed my four kids and me.
S - 1/3 c. 0% Plain Greek Yogurt mixed with 2 T. peanut butter and 1-2 t. THM Sweet Blend with water to drink (S)
D - White Chicken Lasagna Soup with water to drink (S)

Wednesday:
B - (2) Mufflets with Sweet & Spicy tea to drink (S) pg. 237 in the NEW THM cookbook. This makes 16, so my kids whole family will eat these and we'll still have enough leftover for me to eat 2 tomorrow.
L - Deli ham on a low-carb tortilla with cheddar cheese, mayo, mustard, lettuce and onion with fresh veggies and strawberries on the side with water to drink (S)
S - Snickers Hot Chocolate (S)
D - Copycat Olive Garden Minestrone Soup with water to drink (E) ***Use only 1 T. of oil when sautéing the veggies. If you'd like to keep the pasta in the soup then use Dreamfield's. I'm omitting the pasta.

Thursday:
B - (2) leftover Mufflets with Sweet & Spicy tea to drink (S)
L - leftover Olive Garden Minestrone Soup with water to drink (E)
S - Peanut Butter Whip with water to drink (S)
D - Green Chile Chicken Casserole with water to drink (S)

Friday:
B - Peanut Butter Milkshake (S)
L - Salad with (2) hard boiled eggs dressed with Ranch dressing with Cider Pop to drink (S)
S - small handful of almonds and strawberries with water to drink (S)
D - Pizza Casserole with fresh veggies on the side with Bai5 Bubbles Grapefruit to drink (S) pg. 327 in the OLD THM book

Saturday:
B - (2) scrambled eggs cooked in coconut oil with strawberries on the side with Sweet & Spicy tea to drink (S)
L - @ a family birthday party, not sure what is being served but will do my best to stay on plan
S - 1/3 c. 0% Plain Green Yogurt mixed with 2 T. peanut butter and sweetened with 1-2 t. of THM Sweet Blend with water to drink (S)
D - Quinoa Risotto with Garlic Chicken and a small side salad dressed with red wine vinegar with water to drink (E)

Sunday:
B - Thin Mint Shake (S)
L - leftover Quinoa Risotto with Garlic Chicken with water to drink (E)
S - cheese stick and 10 turkey pepperoni with water to drink (S)
D - We have small group at our church and the theme is appetizers. I'm bringing veggies and Mrs. Criddle's French Onion Dip (S)

  1. THANK YOU for posting this. I am in a rut and needed a good reboot to follow to get more familiar with S and E meals that work for me. I have a lot of fun dishes I get to make this week. Thank you!! :)
