Meal Plan Monday: 8/3-8/9/15

So I completely have blown our grocery money for the month because I've been stocking up on some things for the pantry and freezer, and we received a chicken and beef order this past month. Thankfully our month starts over next Monday. This week I bought only produce, a large container or cottage cheese and some milk at the store and that should last us. However, because everything is well stocked I'm still able to make PLENTY of meals out of what we have. If you're curious about how I build my pantry stockpile, you can read about it here. My oldest is at camp this week, so we will have leftovers at a couple of dinner meals and I will be eating those for lunch.

As a side note, I've received quite a few emails and Facebook messages as to where I get my beef and chicken. The beef is from a local farm here in Michigan where I live. I get the chicken from Zaycon Fresh and have been so pleased with it. If you'd like to find a local farm to get meat, dairy, eggs, ect.. Eat Wild is a great resource. They break it down by state and then give links to the different farms in your area.

Here's what we'll be eating this week:

Monday:
B - (2) scrambled eggs and bacon with Sweet & Spicy tea to drink (S)
L - Just Like Campbell's tomato soup with strawberries on the side with Cider Pop to drink (S) pg. 292
S - celery and peanut butter with GGMS to drink (S)
D - Taco Salad topped with salsa, cheddar cheese and a dollop of sour cream with water to drink (S) *** Replace the sugar in the salsa with a small pinch of THM Sweet Blend.

Tuesday:
B - Berritastic Smoothie (S) pg. 248
L - BLT Salad with raspberries and strawberries on the side with water to drink (S) pg. 306
S - green apple with 1/3 c. cottage cheese on the side with Cider Pop to drink (E)
D - Fiesta Quinoa Chicken Skillet with water to drink (E)

Wednesday:
B - Sweet Cinnamon Quinoa with water to drink (E) pg. 227 ***I'm making a double batch and will eat the other half tomorrow.
L - leftover Fiesta Quinoa Chicken Skillet  with Cider Pop to drink (E)
S - Hummus with fresh veggies and water to drink (S) pg. 405 *** I'm using chana dahl instead of garbanzo beans. It will keep the hummus in an S territory rather than S Helper.  This will make enough for my kids and I to have this for today and tomorrow as our snack.
D - Baked Spaghetti "Zoodle" Casserole with small side salad dressed with olive oil and red wine vinegar with water to drink (S) ***You can find the gadget to make zucchini noodles here.

Thursday:
B - leftover Sweet Cinnamon Quinoa with water to drink (E)
L - leftover Baked Spaghetti "Zoodle" Casserole with water to drink (S)
S - leftover hummus and fresh veggies with Cider Pop to drink (S)
D - Easy Summertime Black Bean Chicken Salad served over 1/3 c. brown rice with water to drink (E)

Friday:
B - Peanut Butter Milkshake (S)
L - Lentil Soup for the Soul with strawberries on the side with water to drink (E) *** This will be enough to serve my kids and I lunch for 2 days.
S - green apple with 1/3 c. cottage cheese with Cider Pop to drink (E)
D - Pizza Casserole with fresh veggies on the side and Zevia Ginger Root Beer to drink (S)

Saturday:
B - Peanut Butter Cup Milkshake (S)
L - leftover Lentil Soup for the Soul and raspberries on the side with water to drink (E)
S - 1 oz. cheddar cheese and strawberries with Cider Pop to drink (S)
D - grilled burgers with green beans and Easy Zucchini Noodles for One with Zevia Black Cherry Soda to drink (S) ***I'm doubling the zucchini recipe and that will be enough as a side dish for my family.

Sunday:
B - Sweet Cinnamon Quinoa with water to drink (E) pg. 227
L - out
S - 1/2 green apple with peanut butter with water to drink (S Helper)
D - Rice & Beans with strawberries on the side with Cider Pop to drink (E)
